Still so happy with this little recipe card!

A few years ago I was so lucky to attend a cooking class by Sarah Britton from My New Roots in Amsterdam!

Just experiencing her glow, energy and enthusiasm was a real treat. She is one of my biggest inspiration to nourish myself with whole, unprocessed fresh foods.
Trust me, if you see Sarah, you cannot not be sucked in by her presence!
 

So to this day her recipe card is stuck to my fridge, and I often make one of her breakfast recipes! It's just so easy and fast. They always say.. nothing can be easy fast and good. Well this is!! And it will fill you up with the best nutrients to start your day perfeclty!

Chia, is a superfood. Anti-oxidant, fiber, protein,.. you want is? It's got it!
and the fun part... it swell up with any liquid!! So here comes an easy way to make pudding! And you can use it as an egg replacement!
 

Blueberries, anti oxidants again! Just simply so so good for you, and contribute to your optimum health. And totally approved by Doctor Alejandro Junger in his clean eat / clean gut book.

And a splash of coconut milk.
a perfect replacement for dairy, and adds an instant tropical feeling to your breakfast.

blueberry chia pudding

recipe type: to breakfast, to raw


you will need:
1 tbsp chia seeds
3 tbsp coconut milk - but you can use any nut milk you want!
1/3 - 1/2 frozen blueberries
2 tsp lemon juice
1 tbsp maple syrup ( not really necessary)
pinch of ground cardamom

what to do:
Combine chia seeds and coconut milk in a bowl. Place in the fridge for at least an hour to overnight.
Pour the chia coconut gel into a food processor. Add the rest of the ingredients. Blend high until smooth. Serve immediately.

easy, and fast told you so!!
you can even prep this in the evening while preparing your dinner.
