If there is an important thing I learned from The Bulletproof diet principles it's the importance of healthy fats. Fat as an energy source.  Fat to help you beat those sugar cravings. Fat to make you glow.
These are the perfect snack for when you know that your days are going to be crazy busy and you need energy to keep going. Eating these will help you stay away from those temting cookies, aka fast sugars, and give you a long lasting energy boost and full-ness.
It's high in fat and protein and low in sugar, these balls are to die for. 
Make a batch and store in the freezer for whenever!
As everything, mix match, add, remove,... use this recipe as a starting point.

COCONUT FAT BOMBS- VERSION 1

recipe type: to snack
cuisine: glutenfree, plantbased, dairyfree, grainfree


what you need:
1 cup coconut shreds
1/2 c. Coconut oil, melted
1/4 cup coconut butter ( I used cacao butter as I didn't have coconut butter)
1/4 cup sunflower seeds
1/4 cup pepitas
1/2 cup cashews
1/2 cup almonds
2 tbsp cacao nibs
1 tsp cinnamon
3 medjool dates (pitted) ( I left these out)
1/3 c. almond milk

what to do:
Blend everything in a food processor until dough is achieved. Dough will be wet, that’s good!
Roll into bite sized balls then lay flat on a air-tight container and freeze. They last for months but they're so delicious I bet they won't. Remove from freezer and let thaw before eating for optimal deliciousness!

notes
feel free to remove the dates for ultimate low sugar. 
don't overblend the mixture into a nutbutter. Also super delicious but that's not the texture we are looking for.

 


CACAO FAT BOMBS - VERSION 2
recipe inspired by: Shut The Fig Up

cuisine: plantbased, glutenfree,dairyfree, plantbased
makes about 24

what you need:
1 cup cacao butter
1 cup pecans
1/2 cup coconut oil
1/2 cup unsweetened coconut
1/4 cup ground flax seed
1/4 cup cacao nibs
1/4 cup sunflower seeds
1/4 cup pepitas
1/4 tsp Himalayan salt
1/4 tsp vanilla bean, or 1/2 tsp vanilla extract
2 tbsp raw honey, or liquid sweetener of choice
2 tbsp maca, optional

make it:
Toss everything in your blender & blend your heart away until it starts to form into a thick paste type dough. I don't like to over blend mine because I prefer little crunchy chunks of nuts, seeds & nibs mixed throughout.

By the spoon full, scoop mixture into two ice cube trays. Put in the freezer to set (about an hour if you can wait that long) Turn ice cube trays upside down & pop against the counter, the fat bombs will pop right out.

Store in an airtight container in the fridge or freezer (I prefer the freezer!) for 1-2 weeks. Enjoy! 


KISS* CHOCOLATE COCONUT FAT BOMB - VERSION 3

*KISS (“keep it simple, stupid") with the fat-bomb staples and trifecta—coconut oil, cacao powder, and almond butter. Use this as a base and add in whatever you like: cinnamon, cardamom, vanilla,… etc.

what you need:
½ cup melted organic coconut oil
 ½ cup organic cacao powder
 ½ cup almond butter

what to do:
Melt the coconut oil.
Add in the cacao powder and almond butter  and wisk until creamy and smooth.
Roll into small balls using your hands or pour in small paper muffin cups.
Refrigerate or freeze until hard, then store in refrigerator until ready to consume.
