Seeing Jourdan win model of the year at the British Fashion Council, it reminded me that I should post this recipe!
Her baked seabass with spicy tomato sauce became a staple in my kitchen, as it is so easy to prepare.

And I did!
Definitely tastes I have never tried before!

aked sea bass with spicy tomato sauce by Jourdan Dunn

recipe type: to dinner, glutenfree, fish



What you need:
Cilantro - a big handful
Ground Coriander or Coriander Seeds
Chili Pepper Powder
Ginger - a good knob
Green Chiles - about 3
Tomatoes - 3 big ones
Lemon
Garlic - 2 cloves
Red Onion -1
Sea Bass or any firm white fish, lest say about 150 to 200gr per person.
Oil - coconut or olie oil
Basmati Rice to serve on the side...You can also

What to do:
To prep everything to make the sauce we chop up a bunch of ingredients.
SO first thing, chop up two cloves of garlic. Smash them and then chop them up.
Chop up some ginger into fine pieces.
Use about 3 green chillies, split them in the middle, remove the pits, and chop them up.
Chop up the tomatoes in big chunks, this is going to be the base of the sauce.
Finely chop up the red onion, this will give some great flavor.

Make the sauce first.
Dry roast the whole coriander seeds for about a minute, until fragrant, then smash them to a powder form. Don't burn them... just roast them slightly. The heat will bring out the aroma.
Put the heat back up, add some oil in the pan and sauté the ginger first,  then the garlic until they have a nice color.
Add in the chili and chopped onion, stir it in, leave it for a minute and allow them to soften.
Add the a pinch of chili powder and a pinch of grounded coriander to the mix.
Finely add the chopped tomatoes.
Pound down the tomatoes, pound it down to they get real soft and let simmer for about 5 minutes.
Add fresh cilantro.

Spoon the tomato sauce onto the seabass
Cover the whole fish with the tomato mixture.
Cover the tomatoes and fish with foil,and place in the oven on a nice medium heat to 20/25 minutes.

While that is cooking in the oven, cook the rice
About 3 cups of water to 1 cup of rice.

Get the fish out the oven. Place the fish on a plate, add some rice, finish with some fresh coriander and a slice of lemon.
Done!
