Malabi.....

Something that kept on following me everywhere... In Ottolenghi's cookbooks, at the Rutabaga restaurant and all of a sudden in popped up on the Thursday Dinners foodblog... 
- Pudding was what I go as a kid almost every other day, with speculoos, with chocolate nibs or flakes ' muizenstrontjes' it was my childhood dessert staple! - 

Louise's  recipe was so much easier than Ottolenghi's, it didn't envolve heavy cream, and I could easily substitute the ingredients to my kind of cooking... which means....

none of the 3 whites... dairy, white sugar, and white flour... 

Ill will give you the correct recipe... as my brother always complains when I get my cooking on... 'You need to make the original version first so you know what i really should taste like before making your weird ass version...'     well  thank you very much ;-)

 

 

Malabi - the original version
recipe from Thursday Dinners
recipe type: to dessert, to snack
for 6

What you'll need
For the pudding
50 gr of maizena
80 gr sugar
700 ml full milk
1 tl  rosewater
one hand of pistachio's, roughly chopped
one hand of  pomegranate seeds

For the syrup
1 dl of water
75 gr sugar
1 vanilla pod
1 lemon 'disc'

What to do
Mix the maizena with a part of the milk, to a little paste. Make sure there are no clots left, and everything is dissolved.
Place a pot on low heat and pour in the rest of the milk and the sugar...stir well so that the sugar can easily dissolve in the milk.
Once the milk is almost going into a boil, you add the milk/maizena mixture. Let it cook trough while you continuously stir. Now add the teaspoon of rosewater. Stir again and divide into 6 jars of a big clear plate.
Let the Malabi cool down and place the jars or dish in the fridge.
In the meanwhile, make the syrup by mixing the water with the sugar... until well dissolved. Add the vanilla stick and the lemon into the deep pan. Stir well en let the syrup thicken on low heat.
Take out the jars or dish of pudding, drizzle the syrup on top.
Finish with adding the chopped pistachio's and the pink jewels, pomegranate.

What you'll need
For the pudding
50 gr of arrow root
80 gr coconut sugar - ill add a bit less because the milk I use is already quite sugary
700 ml soy or almond milk - haven't tried rice milk
1 tl  rosewater
one hand of pistachio's, roughly chopped
one hand of  pomegranate seeds

For the syrup
1 dl of water
75 gr coconut sugar
1 vanilla pod
1 lemon 'disc'

what to do
same directions as above, just with all the substitutes ;-)

 

Seriously make this recipe!

It's soooo delicious! And so Quick to make! especially when you have guests over! ANd I have to say it juts looks amazing to!
Or even if you don't have anyone over, and you just want a dessert in front of tv... This is it!!! 
It's light ( my version ;-) ) Omit the pomegranate and you don't have fruit that will ferment on top of your dinner. And made with soy or almond milk... hello vegetarian protein!
