to snack - Quinoa Puff Chocolate Squares

This is the easiest and maybee to most addictive snack ever!! You can use this recipe as a base and add change, get creative with it according to your taste!!

Quinoa Puff Chocolate Squares!
inspired by Erin Ireland - Crispy puffed quinoa squares and The Minimalist Baker’s Chocolate Puffed Rice Bars.

what you need:
For the base:
1cup + 1/2 cup puffed quinoa or puffed rice
1/3 cup nut butter of your choice, I used almond and coco
2 tbsp + 2 tsp melted coconut oil
1/8 cup of maple syrup
1/2 tsp vanilla extract
pinch sea salt

For the chocolate sauce
1/4 cup. melted coconut oil
1/4 cup cacao powder
maple syrup to sweeten (to taste)
pinch sea salt, always!

what to do:
Line a baking tray with baking paper.
Melt the nut butter, melted coconut oil, maple syrup, vanilla and salt in a saucepan
Add puffed cereal of choice and st until completely coated with wet mixture.
Pour your coated puffed cereal into your baking tray and press down into an even firm compact bar.
Place in freezer to firm up.

For the topping:
Melt coconut oil in a pan. Add in the cacao powder, sea salt, maple syrup.
Once your base is firm and chilled (at least 30minutes), drizzle your topping over the cereal base and spread evenly with the back of a spoon. 

Optional:
You could repeat this to coat the two sides of the cereal bar.
You could garnish with toasted nuts, seeds, cacao nibs, rose petals. 
Place back in the fridge until completely firm.

PS: make this with peanut butter instead of almond butter! add sprinkle sea salt on top!! I don’t take any responsability!!
