Mint and mango marinated courgette 'spaghetti'

Serves 2
What you need:
1 mango peeled and de-stoned
4 tbsp olive oil (or more if liked)
15 mint leaves
½ tsp ground cumin
1 tsp lime juice
2.5cm • 1in piece of red chilli
5cm • 2in piece of fresh root ginger
2 courgettes about 200g • 7oz each
What to do:
Tip the mango flesh along with all the other ingredients except the courgettes into a blender and whiz till smooth.
Very finely slice the courgettes lengthways into julienne strips (alternatively, put them through a spiraliser).
Pour the minty marinade over the courgette ‘spaghetti’ and work it in by hand. And that’s it, ready to serve.
