Kiwi Avocado Salsa

what you need:
2-3 ripe kiwi fruit, peeled, chopped
1 large avocado peeled and chopped
1 tablespoon green bell pepper seeded and thinly chopped
1 tablespoon chopped fresh cilantro
1 teaspoon olive oil
1 teaspoon lime juice
sea salt and pepper to taste
Tortilla chips
1 sweet potato - thinly slice using a mandoline
olive oil
salt and pepper to taste
what to do:
For the Chips
Preheat the oven to 175degrees.
Thinly slice the sweet potato using a mandoline. In a mixing bowl, drizzle with olive oil, pepper and salt, mix well to cover the sweet potato's. Place them on a baking sheet and let them roast in the over for about maybe 10min, depending on the thickness of the slices.... They need to become like chips...
For the salsa
In a large bowl, combine kiwi, avocado, bell pepper, chopped cilantro and lime juice.
Season to taste with additional sea salt and lime juice.
Gently mix it together and serve with the sweet potato chips
