You might or might not have make a chia pudding before...
Pretty cool thing about chia seeds, except from being very nutritious, they swell up when soaked into liquid to form a gel.
Never thought about grind them in a blender until I came across a recipe on instagram created by ground chia to make a smooth pudding...
Never ever thought of that before! So clever! Had to give it a try!
The result was a creamy and delicious pudding!
Makes a very indulgent breakfast or a smooth and creamy dessert!
This opens up to a whooooole lot of possibilities!

Smooth mocha chia pudding
makes: 1 to 2 servings
recipe type: to breakfast, to snack, to dessert, glutenfree, dairyfree,vegan

What you need:
1/3 cup whole chia seeds
2 tbsp cocoa powder
1/4 tsp vanilla powder or extract
1/2 tsp espresso powder
pinch of sea salt
1 cup unsweetened non-dairy milk
2 tbsp pure maple syrup

What to do:

Grind the chia seeds in a high-speed blender until powdered (make sure the blender container is completely dry first).
Add the remaining ingredients and blend until smooth.
This may take a couple of minutes.
Be sure to stop and scrap down the sides and bottom of the container too, otherwise you might find globs of chia at the bottom!

Transfer the pudding to a container, cover and chill in the fridge for an hour or two before serving.


a variation:

Rich creamy dreamy chocolate pudding
recipe type: to breakfast, to snack, to dessert, glutenfree, dairyfree, vegan

what you need:
1/3 c. chia seeds
1 c. unsweetened almond (or other non-dairy) milk
2 tbsp. unsweetened cocoa powder
1 tbsp. maple syrup (I used Grade B)
1 tsp. ground cinnamon
pinch of cayenne (optional)

What to do:
Combine all ingredients in a medium bowl.
Cover and refrigerate overnight or at least 8 hours.
Transfer mixture to a high-powered blender and blend until completely smooth. If pudding is warm from blending, return to refrigerator until chilled.
(Alternately, you can just stir the pudding and eat it without blending.)

Note:
This pudding is thick, almost like a mousse. If you've blended your pudding and decide you want it a little thinner, add some extra milk. Be sure to blend the pudding until completely smooth--if you don't, it will be gritty! A high-powered blender like the Vitamix works best. Any sweetener you like will work in this, and if 1 tablespoon isn't sweet enough, feel free to add more.
