Having some serious grapefruit cravings!
Maybe it my body that needs to load up on vitamin C after being down with the flue... Give this breakfast a try! You can make it in the morning or prep it the night before! So easy and delicious! Some vitamin C, omega 3 from chia, healthy fats from the coconut!
You can easily prep this breakfast the night before when you have an early morning so you can load up on a a filling, nutritious breakfast Because the chia will set into a pudding you can easily grab it and eat it on the go.
Maybe you can try different combinations? I know grapefruit is quite bitter,...you might want to try these...
Try mashing a banana into it or some raspberries, replace the grapefruit juice with orange juice, whatever takes your fancy!
Grapefruit passionfruit and coconut chia pudding
recipe type: to breakfast, to raw
lactose free, gluten free, vegan
serves 2
to make:
4 tablespoons chia seeds
1 pink grapefruit
100 ml milk (you can use coconut or almond if you prefer)
2 tablespoons desiccated coconut (unsweetened)
1 teaspoon honey 2cm piece of ginger, finely grated
1 passion fruit
fresh mint leaves
what to do:
Start with the chia seeds in a bowl. Segment the grapefruit holding it over the bowl of chia seeds so that you catch all the juices. Add the milk, desiccated coconut, honey and ginger, mix well together and set aside to soak for at least 30 minutes or overnight if you’re not a morning person. When you’re ready to eat, cut the passion fruit in half and scoop out the seeds and pulp, add some fresh mint and that is it!
