After watching the pancake and toast recipes, Ken did something I never though of!
Soaking chia in Apple Cider Vinegar!
Genius!
So I gave it a go!
Blueberry Chia Pudding
serving: 4-8
recipe inspired by Ken Addington from Five Leaves NYC
recipe type: to breakfast, glutenfree, dairyfree, vegan
Prep all of the components of this pudding the night before, and you’ll wake up to an easy, healthy, elegant, delicious breakfast.
What you need:
for the blueberry chia pudding:
2 cups chia seeds
6 cups fresh apple cider
1 cup crushed blueberries
zest and juice of 1 lime
1 tablespoon honey
a pinch of grated allspice
a pinch of salt
for the turmeric apricots:
2 cups agave syrup
juice and zest of 1 lime
a pinch of salt
2 tablespoons ground turmeric
2 cups dried apricots ( mine were organic, that's why they were less orange-y...)
for the goji berries:
½ cup goji berries
½ cup orange juice
to serve:
½ cup toasted macadamia nuts
chopped mint
What to do:
For the blueberry chia pudding.
Crush up the blueberries to bring out more of their juices and for the color.
Whisk in the apple cider, add a pinch salt, a squeeze of lemon juice. Add some honey. Wisk it all up. Add the chia seeds,while whisking making sure there are no clumps, they are going to balloon up. Add remaining ingredients, whisking in periodically. Let sit for three hours or overnight. You can set this in the fridge or leave it out at room temperature.
For the turmeric apricots
In a small pot over low heat, bring agave syrup to a simmer. Whisk in lime, salt, and turmeric, then pour over apricots and let stand overnight. This is going to plump the apricots.
For the goji berries.
Soak goji berries in orange juice overnight.
For garnishing
Chop up some toasted macadamia nuts.
To serve, top blueberry chia pudding with orange-juice-soaked ans softened goji berries,turmeric apricots, chopped mint and macadamia nuts.
