Had a little cooking session with the recipe developer from Le Pain Quotidien.
These are little very simple recipes we tried out. Just looooove these quinoa bars!
So simple to make! (aand glutenfree.... yeaaay!)
Was amazed how ahead of their game they are and their true passion for food! The developer, Jan, was so inspiring! Went home with a ton of inspiration!
( think rice pudding made out of quinoa and nutmilk, cashew creme with harissa and pickled veggies, elderflower infused quinoa compote... and so much more! )
They really live and love clean and simple nourishing foods!

Matcha Chia Pudding
recipe from: Le Pain Quotidien
recipe type: to breakfast, glutenfree, to snack, vegan

what you need:
40 grams of chia seeds
3,5 dl of coconut milk
3 pinches of matcha powder

what do do:
Blend the chia seeds with the coconut milk, the matcha and the agave syrup. Let rest for 30 min at room temperature , give it a good stir again, so all the seeds can soak up the liquid and 'bloom', before placing it one night in the fridge.
The next morning take out of the fridge and enjoy with a Puffed chocolate quinoa bar. ( see below)


Chocolate Quinoa Puffs Bar
recipe from: Le Pain Quotidien
recipe type: to breakfast, glutenfree, to snack, vegan


what you need:
8 tbsp of quinoa puffs
70 gr of dark chocolate
70 gr of agave syrup or any other sweetener ( rice syrup, coconut sugar,...)

what to do:
Heat up chocolate 'au bain marie' and add the puffed quinoa.(remove the pan from the stove for this)
Place the mixture in silicone mold ( similar to financiers) or form them on an a baking sheet, and place in the fridge to cool and set! Once set, slice them in bars!
Enjoy them on their own. with jam, with nut-butter, as a snack and with the chia pudding.
